What can I do with old dates?


For The Dough: 6 cups all-purpose flour. 1 teaspoon of ground cinnamon. 300 ml of cooking oil. 355 ml of warm milk. 1 teaspoon of sugar. 1 teaspoon of yeast. ½ cup of warm water. Pinch of salt. For The Filling: 2 cups of date paste. 1 teaspoon of ground cinnamon. 1 beaten egg for egg-washing the Kleicha.


To Make Dough:
1. Proof the yeast by mixing it with sugar and warm water. Allow it to stand for 10 minutes.
2. Mix the flour, salt and cinnamon. Gradually add the oil and knead vigorously until dough starts to form.
3. Add the foamy yeast mixture to the dough.
4. Gradually add the warm milk while kneading vigorously until the dough becomes elastic.
5. Cover the dough and allow it to rise at room temperature.
To Make The Date Filling:
6. In a bowl, mix the date paste with cinnamon.
To Assemble The Kleeja:
7. Roll dough into a thin large square.
8. Spread the date paste all over.
9. Roll up the dough tightly.
10. Slice the roll into small discs and place them on a baking tray lined with baking paper.
11. Brush the top of each disc with egg wash.
12. Bake in a heated oven at 180° C for 20 minutes.

Preparation Time : More than 60 Minutes

Cooking Time : 10 - 20 Minutes
