What can I do with leftover cooked plain rice?
3 tablespoons of butter, divided into 2 portions. 2 whisked eggs. 2 medium carrots, peeled and diced. 1 small white onion, diced. ½ cup of frozen peas. 3 garlic cloves, minced. Salt and pepper. 4 cups of cooked and chilled rice. 3 green onions, thinly sliced. 3-4 tablespoons of soy sauce. ½ teaspoon of sesame oil.
In a frying pan, melt the first portion of butter and fry the whisked eggs, then pour them in a separate plate and set aside.
In the same pan, melt the second portion of butter and add the carrots, onions, peas and garlic.
Season with salt and pepper, and stir.
When the vegetables are soft, add the cooked rice, green onions and soya sauce, stir and leave on low heat for 3 minutes.
Stir in the scrambled eggs and add the sesame oil.
Serve!
