What can I do with leftover ripe parsley and mint leaves?
½ cup of cubed mozzarella cheese. ¼ cup of finely chopped parsley. ¼ cup of finely chopped mint leaves. ¼ cup of cooking oil. 1 beaten egg. Samosa dough.
1. In a bowl, mix the parsley, mint and mozzarella cheese until combined.
2. Spread the cheese mixture on the samosa dough.
3. Fold the samosa into a roll and seal it shut by spreading a bit of egg on the closing corner.
4. Heat up the oil and deep-fry the samosa until crispy and golden.
5. Serve!
