Kushari is a national dish of Egypt consists of rice, pasta and different beans.
¾ cup of leftover cooked white rice ½ cup of cooked lentils 1 cup of cooked macaroni 1 sliced large onion (caramelized and brown) 2 cut tomatoes 1 tablespoon of tomato paste 1 minced garlic 1 tablespoon of oil 1 tablespoon of lemon juice 1 tablespoon of olive oil 1 tablespoon of vinegar Spices: cumin powder, salt and paprika powder
In food processor, add the tomatoes, garlic, spices, tomato paste, vinegar, olive oil, lemon juice to make the tomato sauce. Mix ingredients well
Heat the oil in a medium saucepan. Add the rice, garlic cloves, cooked lentils, cumin, salt and brown onion for 5 minutes over medium heat
Add the rice, lentils and macaroni to a large bowl and toss to combine. Then top the mixture with the tomato sauce
For decoration, you may top the dish with crispy onions. Serve warm
