What can I do with ripe vegetables?
2 eggs Salt, black pepper, and cinnamon powder (to taste) 3 to 4 tablespoons olive oil 3 tablespoons leftover chopped green onion 1 leftover medium tomato, chopped 1 ½ tablespoon diced cheddar cheese
Whisk eggs in a bowl until yolks and whites are completely combined.
Add salt, black pepper, and cinnamon to the mixture and continue to whisk until well-blended.
Heat oil in a non-stick pan over medium heat.
Add chopped green onion into pan and stir.
Add tomato and cheese and stir occasionally.
Pour whisked egg mixture into pan and cook until it has set (i.e., there is no longer any loose, easily flowing liquid egg) and the edges look crisp.
Slide the omelet onto a plate and serve.
