What can I do with ripe fruits?
½ cup butter ¼ caster sugar 1 teaspoon vanilla extract ½ teaspoon lemon zest 2 eggs ¼ teaspoon salt 1 teaspoon baking powder 2 ½ cups all-purpose flour 200 grams leftover strawberries 2 leftover bananas ¼ cup sugar
Beat butter and caster sugar in a bowl with a beater on low-speed until well-blended.
Add vanilla, lemon zest, eggs, salt and baking powder and continue to beat on low speed.
Add flour little by little and then beat on high speed until it forms into well-combined dough.
Take dough out of bowl, form a ball, and divide into half. Mold one half into a round patty-like shape, wrap well with cling film and place in the freezer for an hour. Press down other half of dough into a baking pan until it evenly covers entire base, and then place pan in the fridge for an hour.
Cook bananas, strawberries and sugar over medium heat in a pot until sugar dissolves and fruits soften.
Take baking pan out of fridge and spread fruit mixture onto dough.
Grate frozen dough using a grater and spread all over fruit mixture in pan.
Bake at 180˚C for 40 minutes.
